Looking for a simple, refreshing and filling salad? We have a simple Mediterranean salad from McConnell Heart Health Center Registered Dietitian, Jenalee Richner, that’s easy to throw together and yummy to eat. Enjoy!
- 1/2 cup garbanzo beans
- 2-3 TBSP prepared Israeli couscous
- 1/4-1/2 cup tomatoes (I will usually use 1-2 Campari tomatoes)
- 1/4-1/2 cup diced cucumber
- 1oz feta cheese
- 1-2 tsp olive oil
- 2-3 TBSP red wine vinegar
Just toss and eat. If you’re making the salad to eat at a later time, add the oil and vinegar at the time of eating.
