Looking for a simple, refreshing and filling salad? We have a simple Mediterranean salad from McConnell Heart Health Center Registered Dietitian, Jenalee Richner, that’s easy to throw together and yummy to eat. Enjoy!
Ingredients
- ½ cup garbanzo beans
- 2-3 tablespoons prepared Israeli couscous
- ¼-½ cup tomatoes (I will usually use 1-2 Campari tomatoes)
- ¼-½ cup diced cucumber
- 1 ounce feta cheese
- 1-2 teaspoons olive oil
- 2-3 tablespoons red wine vinegar
Instructions
Just toss and eat. If you’re making the salad to eat at a later time, add the oil and vinegar at the time of eating.
